In a shallow bowl (I like to use a glass pie pan), whisk together eggs, milk, cinnamon (1/2 tsp), and vanilla.
Place diced apples in a bowl. Then add the brown sugar and cinnamon (1/2 tsp) and mix to coat apples.
Heat your griddle to 350 deg F and add butter (1/2 Tbs) in little pads on different areas of the griddle. Use a spatula to spread the butter evenly over the griddle. If you are using a normal pan, melt the butter in the pan on Medium heat.
In a separate pan while the griddle is heating up, melt butter (1Tbs) over medium heat. Once melted, add the apple mixture and cook for 3-5 minutes. The apples should be fork tender when done.
While the apple mixture is cooking, dip the bread slices one at a time in the egg (I usually dip twice on each side, allow excess to drop off back into bowl, and then place on the griddle.
Cook the french toast for 1-2 minutes per side. Sides will be golden brown when done.
Plate your french toast and then top with the apple mixture.
