Tomorrow is Mother’s Day. With our current situation, eating out in a restaurant is not a feasible option in most areas. As a result, many dads will be helping the kids cook for mom at home. This recipe is really quite simple to make, but looks a bit more fancy than the traditional breakfast. You could top with whipped cream if desired, but honestly, the apples provided so much flavor that I didn’t even add syrup to mine.
I made this recipe for breakfast this morning. We have been getting a produce box weekly from a nearby restaurant, and had some extra apples to use up before picking up our next box later today. I recommend checking out this option with a nearby restaurant or farm. It can reduce the amount of time you have to spend in the grocery store, help a local business, and increase your fresh produce intake.
As far as notes on this recipe, I definitely recommend an electric griddle. It allows you to cook a larger quantity of food with an even heat distribution. We have one very similar to the following: Presto Cool Touch Electric Griddle. We even take it on trips or camping when we know there will be an outlet available. I used a regular potato peeler and a manual apple corer (like this one: Oxo Apple Slicer and Corer) to make dicing up my apples easier. If you are handy with a paring knife, then you could use that approach as well. Below is my set up:

Apple Cinnamon French Toast
Equipment
- Griddle and/or pan(s)
- Apple corer and peeler (or paring knife)
Ingredients
French Toast
- 6 eggs
- 1/4 cup milk I used my son's whole milk, but any should work
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- 1/2 Tbs butter
- 6 slices of bread I used whole wheat, but French bread is extra delicious
Apple Topping
- 2 apples cored, peeled, and diced
- 2 Tbs brown sugar
- 1/2 tsp cinnamon
- 1 Tbs butter
Instructions
- In a shallow bowl (I like to use a glass pie pan), whisk together eggs, milk, cinnamon (1/2 tsp), and vanilla.
- Place diced apples in a bowl. Then add the brown sugar and cinnamon (1/2 tsp) and mix to coat apples.
- Heat your griddle to 350 deg F and add butter (1/2 Tbs) in little pads on different areas of the griddle. Use a spatula to spread the butter evenly over the griddle. If you are using a normal pan, melt the butter in the pan on Medium heat.
- In a separate pan while the griddle is heating up, melt butter (1Tbs) over medium heat. Once melted, add the apple mixture and cook for 3-5 minutes. The apples should be fork tender when done.
- While the apple mixture is cooking, dip the bread slices one at a time in the egg (I usually dip twice on each side, allow excess to drop off back into bowl, and then place on the griddle.
- Cook the french toast for 1-2 minutes per side. Sides will be golden brown when done.
- Plate your french toast and then top with the apple mixture.
My husband made this for me for Mother’s Day! It is absolutely delicious! I enjoyed every bite, which I ate hungrily. I am on weight watchers however, so he should have skipped the eggs and bacon. I highly recommend this dish!!!
